As an alkaline cooking expert, I have always focused on creating delicious and wholesome recipes that not only taste great but also have a positive impact on our health. One of my favorite dishes is this Chickpea and Spinach Alkaline Curry. It’s packed with nutrient-rich ingredients and bursting with flavor, making it the perfect addition to any alkaline diet.

Ingredients:
– 2 cups of cooked chickpeas
– 1 tablespoon of coconut oil
– 1 onion, diced
– 3 cloves of garlic, minced
– 1 teaspoon of ground cumin
– 1 teaspoon of ground coriander
– 1 teaspoon of ground turmeric
– 1 teaspoon of garam masala
– 1 can of diced tomatoes
– 2 cups of vegetable broth
– 4 cups of fresh spinach, chopped
– Salt and pepper to taste
– Fresh cilantro for garnish
– Cooked quinoa or brown rice for serving

Directions:
1. In a large pot, heat the coconut oil over medium heat. Add the diced onion and garlic, and cook until the onion is translucent.
2. Add the ground cumin, coriander, turmeric, and garam masala to the pot, and cook for another minute to toast the spices.
3. Stir in the diced tomatoes, vegetable broth, and cooked chickpeas. Bring the mixture to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld together.
4. Add the chopped spinach to the pot, and let it wilt into the curry. Season with salt and pepper to taste.
5. Once the spinach is wilted, remove the curry from the heat and serve it over cooked quinoa or brown rice. Garnish with fresh cilantro.

Notes:
– Feel free to customize this curry by adding other alkaline-friendly veggies such as bell peppers, zucchini, or sweet potatoes.
– For an extra kick of heat, add a chopped chili pepper or a dash of cayenne pepper to the curry.
– Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
