– 2 large sweet potatoes, peeled and cubed
– 1 can of coconut milk
– 1 onion, chopped
– 3 cloves of garlic, minced
– 1 tbsp of coconut oil
– 1 tbsp of fresh ginger, grated
– 4 cups of vegetable broth
– 1 tsp of cumin
– 1 tsp of turmeric
– Salt and pepper to taste
– Fresh cilantro for garnish

1. Heat the coconut oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
2. Add the grated ginger, cumin, and turmeric to the pot, and sauté for another minute to let the spices release their flavors.
3. Add the cubed sweet potatoes to the pot, and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the sweet potatoes are tender.
4. Once the sweet potatoes are cooked, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, you can use a regular blender and blend the soup in batches.
5. Stir in the coconut milk and season the soup with salt and pepper to taste. Let the soup simmer for another 5 minutes to let the flavors meld together.
6. Serve the soup hot, garnished with fresh cilantro.

– You can customize this soup by adding other vegetables such as carrots, celery, or bell peppers.
– If you prefer a spicier soup, you can add a pinch of cayenne pepper or red pepper flakes.
